The thing we love the most about Ramadan is the delicious traditional Arabic dishes cooked especially desserts! It was hard for us to pick one good dessert recipe from the wide variety of classic Arabic desserts, such as Kunafa Bil-Jibn, Pistachio Baklawa, Mohallabiah, Umm Al, Qatayef and many others. They are all super tasty treats in their own right! So instead, we decided to go for a dessert recipe that was not too popular in the Gulf  region or Egypt and that we think deserves to be on the Highest Rated Recipes list because of how absolutely appetizing  and divine it is. This recipe is called Halawet El-Jibn Bil-Kishta. It is a stuffed sweet cheese recipe. Check out the recipe below!

The ingredients

For the Halawet El-jibn dough:

  • 1 kg akawi cheese, cut into thin slices
  • 1½ cups fine semolina or 240 g
  • 3 cups sugar syrup

For the filling:

  • 3 cups water or 750 ml
  • 1 tin NESTLÉ® Sweetened Condensed Milk or 397 g
  • Âľ cup corn flour or 90 g
  • 2 tablespoons blossom water

How to Prepare

  • Soak cheese in room temperature water for 4 hours to remove the salt (change water every 1 hour) then drain.
  • Place NESTLÉ® Sweetened Condensed Milk , water and corn flour in a large saucepan, bring to boil with constant stirring until sauce thickens. Add blossom water and stir. Keep aside to cool into a room temperature.
    • Place the cheese in a bowl over boiling water and stir until cheese is melted. Add semolina and stir for 5-6 minutes.
    • Sprinkle 4 tablespoons of hot sugar syrup over the working table and place over the hot cheese dough, then put another 4 tablespoons of hot sugar syrup on top and roll the dough using a rolling pin to have a thin layer then cut into squares with 7cm length.
    • Mix the cooled cream mixture until is smooth and spoon 1 tablespoon on each dough piece and roll.
    • Serve the Halawat el-jibn with the remaining syrup.

This recipe serves 10 people. Although preparation time will take longer, cooking time should not exceed more than 20 minutes.

We’re back! Ramadan Kareem to All!

With Ramadan here, we can’t help but say how beautiful this blessed month is. Whether it is the spirit of Ramadan and what it represents (spirituality, patience and discipline), the different iftar or sohour gatherings held with family and friends, the beautiful decorations being put up with colorful lanterns hanging everywhere from the streets to the inside of houses, the help given and the goodness offered to the unfortunate, or simply the amazing food that is cooked and that we just savor; we love it all the same and is something we look forward to every year!

How to have your healthiest Ramadan ever:

Something that we thought would be interesting to briefly talk about and that we will elaborate on more in a future post is one’s health during Ramadan. One of the common myths about fasting in Ramadan is that it is not healthy for you and your body because you are not eating enough and your body is constantly tired. Although you might suffer from low energy throughout the fasting time and the first couple of days may be very hard to adjust to, if done properly, fasting in Ramadan can actually be beneficial in many ways.  According to scientific research, fasting can actually help you lead a healthier diet post the fasting month as it helps firm up your will when it comes to food, and hence eat in moderation. It can also increase your metabolism and help build stronger muscles faster.  It all depends on your relationship with food while fasting and the lifestyle you lead throughout this month. MEET CONFASHION!

Confashion grew up in in an almost female dominated house that it was inevitable to be interested in fashion. What triggered her passion for fashion and made her who she is today is her mother. Back then, because of the lack of boutiques that sell great quality women’s wear, her mother used to sketch and design her own outfits. And she used to accompany her to the tailor’s shop. Ever since, she was mesmerized by the outcome of her little design projects as she used to get asked a lot about her clothes. But what inspired her blog, Confashions From Kuwait, which came about in April 2007, is the mere absence of a Kuwaiti fashion blog although women’s fashion and shopping plays a major role in the Kuwaiti society. Hence, she decided to start a blog as an outlet for her passion for fashion and lifestyle and venture into the world of blogging. Confashion’s number one fashion icon is Iris Apfel. She also loves Grace Kelly’s ladylike style, Diane Kruger for trying out different looks every time, and ChloĂ« Sevigny for her avant-garde approach to fashion. She states that “These are women who are savvy about what works for them. And i think that’s one of the most important parts of developing your own personal style.” Personally, Confashion describes herself as a quiet person who loves staying at home with family and close friends. UrbanSouq: How would you describe your personal style?

Confashion: A little bit of everything. I can’t stick to one style so I try incorporating something different to my look. I tend to mix vintage with new, girlie with gothic, avant-garde with a hint of classy, high-street with high-end brands. But at the end of the day, I have to be comfortable with what I’m wearing (physically and mentally).

UrbanSouq:What are your greatest fashion influences?

Confashion: I’m constantly influenced by a lot of things like the people around me, magazines, old family photo albums, and traveling. At the moment, I find myself musing over the legendary Iris Apfel’s eccentric style and her love for colors.

UrbanSouq: What is your fashion tip for the season?

Confashion: For Fall 2010, buy and wear lots of velvet pieces in rich colors and pile on the rings.

MEET TERESA!

We had an awesome opportunity to meet Teresa from candyandcookie.com at the Dubai Fashion Week. Originally from Sweden and currently living in the UAE (it’s been 5 years), Teresa started off her journey by working closely with sunsilk and mac.

She started blogging in a way to market her Candy and Cookie Jewelry. Her personal style is funky with classics-rock and roll twist. Although she has no specific fashion icon, her greatest fashion influences are streetstyle blogs-tv shows-s&c and madmen-magzines. Find out more on the talented Teresa below!

Teresa: Actually, converse shoes.

UrbanSouq: What is your fashion tip for the season?

Teresa:

My fashion tip for the next season would be the humble jeans shirt. Wear jeans on jeans (HOT day look) or with statement heels and a lace mini (Very D&G inspired) for an evening look. Also versatile as it’s the perfect cover up with a straw fedora on the beack or over a flovery jumpsuit (very Alexa Chung or Kate Bosworth’s festival look).

UrbanSouq: What are five things you can’t live without?

Teresa: music, brittish humour, my Nikon D90, my family and cut off jeans shorts.
